You may have noticed our absence lately on Social Media.... we intentionally unplugged and 'went bush' with the kids. We spent several days camping on the Mitchell River - enjoying the amazing tropical winter weather and quality time with the kiddos.
Ironically, my kids love food besides coconut chips, and camping tends to have a lot of junk-food. *sigh*
Before we left, I met Manu Feildel at the Sunday Port Douglas Markets. I heard he was in town for a 'Chefs in Paradise' event, and sure enough I spotted him amongst the market crowds. I used to watch him in the 'Ready Steady Cook' days, but I think he's best known for his role MKR My Kitchen Rules. He graciously agreed to a pic with me and one of my staff Matthew - thanks Manu!

Homemade Muesli - Vegan, Paleo, No Sugar June 07 2016, 0 Comments
I'm honoured and thrilled to have this recipe from the lovely Naomi from Raw Gems*. Here is her recipe for Homemade Muesli. Thanks Naomi! xo
Muesli is very easy to make! You can add whatever you like to suit your own tastebuds. Here’s what I used in mine. All the ingredients that I use are organic.
4 cups of oats
1 cup bran
1 cup Puffed rice
1 cup Puffed buckwheat
1 cup shredded coconut
1 cup Sultanas
½ cup Sun flower seeds
½ cup Pepitas seeds
½ cup Goji berries
½ cup Cranberries
½ cup Slithered Almond
½ cup Currants
Add all ingredients in a large bowl or container, layer by layer. Once all ingredients are in the container, stir with a wooden spoon until the mixture is even throughout. Enjoy with your favourite milk - my favourite is activated almond milk.
Save remaining muesli in an air-tight container. Enjoy!

Homemade Fudge with Coconut Sprinkles. Vegan, Raw, and Paleo friendly! July 13 2015, 0 Comments
I have the BEST recipe for homemade fudge - it's Paleo and Vegan, healthy and delicious.
This is perfect to make for the unannounced guest ("Hey, can we pop in for a quick cuppa?") or last minute 'bring a plate to share' function.
Here it is:
BLITZ these items (I use my blender):
1/2 cup coconut oil
1/2 cup cacao powder (or cocoa powder)
1/2 cup maple syrup
1 cup walnuts
1 tbsp macadamia oil
2 pinches salt
When finished, stir through 50 grams of our COCONUT SPRINKLES. I prefer to use either Maple, Himalayan Salt, or Plain. But, if you prefer to add a bit of extra spice, use the Sweet Chilli.
Spread mix into a glass baking dish (I usually line mine with cling wrap or baking paper). Sprinkle COCONUT SPRINKLES on top.
Freeze 1 hour.
Get ready for the compliments - this is a super easy and quick recipe to make and is a guaranteed crowd pleaser!
