Thank you for supporting our small business this year.
Back in March, I wasn't sure if our Small Business would survive the pandemic. Would people continue to buy coconut chips & granola? Would our products be a necessity when money was tight? And living in a tourist town, how would our local sales be impacted without tourists?
But we soon found that Australians were quick to support locally grown food and small business.
Aussies were quarantining and our online sales surged. I still get teary thinking of the generosity and encouragement from strangers - it was as if people were intentionally looking to support small business like us.
Our locals came through in a big way, too - local shops began stocking our products (and selling out) like never before. And our markets were filled with people from nearby regions. Australians were holidaying in their backyard and supporting the small businesses around them.
Now it's December 2020. We've made it this far - I am optimistic about the future.

I also wanted to let you know our plans for the next 6 weeks. Some of our staff have asked for extended time off, while others are here for the holidays.
We will be closed for the upcoming public holidays, but will be around for orders as needed. Our online store will remain open and we are continuing with the markets over the holidays.

Sometimes I feel like I live in a nature documentary.... like last night when Jesse (my husband) brings in this python he caught outside our home.
The python was on its way to eat our chickens.... Jesse caught the snake and released it back into the rainforest (and saved the chickens!).
I remember the first time Jesse caught a wild python: I had only been in Australia a few months and was worried about the plethora of deadly Australian animals that, if the stories were true, lurked in every corner of the country, waiting to attack the next foreign visitor.
The python was stretched across the road and was moments away from being flattened by the next passing car, when suddenly Jesse braked, grabbed the snake, and released it safely away from traffic.
I was SO SHOCKED at the time.... and yet now, 15 years later, this is standard in our life.
We never kill these beautiful animals (unlike many locals in our area). In fact, they do a darn good job of keeping the rodent population under control, and hey they were here first and are part of the natural beauty of the rainforest.
So, when the python tries to take the easy dinner option a la fresh chicken, Jesse simply catches it, brings it inside to the kids can hold it and appreciate the beauty, and releases it back onto the property.
What does this have to do with coconuts?
Not only is it rare that I get a photo of Jesse willingly smiling for the camera, but it's a bit of the 'behind the scenes' for our coconut business. We are coco-NUTS about pythons (and all Aussie native animals!), and this helps paint the bigger picture of why we do what we do.
We support Australian farmers (with our macadamias, almonds, linseeds, mango, pineapple, sunflower seeds, pumpkin seeds, and pecans for our muesli & granola!), and we respect the coconut trees by climbing them without damaging them with spikes.
Our home & commercial kitchen is solar-powered. We send online orders in repurposed boxes (that we collect from local shoe stores and hardware stores).
These small steps are drops in the ocean, I know. But it's better than nothing and helps set the example for our children about how to run an ethical business.
And saving the python? It goes hand-in-hand with running an ethical & sustainable business.
It's the right thing to do.

Seriously, I get this all the time.
My answer?
“Nah, we don’t want to.”
To some people, this sounds INSANE. They try our chips and think, “If you sell more, you’ll be rich! More is better!”
But in fact, the opposite is true. Trust me - we’ve thought about scaling bigger (and we totally appreciate our customers wanting the best for us!). But for us, “getting bigger” is not worth it, and here’s why:
1. It would compromise our core value: Family First. We’ve found the perfect ‘work/life’ balance with our business. We work from home, we choose our own hours, and we spend a lot of quality time with our kids. We work hard, but we also take weeks off at a time and travel with our kids. We love this flexibility. If we scaled our business to these huge levels, our balance ‘work/life’ balance would shift to ‘more work, less life’ and we don’t want that.
2. We use Australian-grown coconuts only. Our coconut supply is limited because we harvest our coconuts off our local beaches. If we scaled to HUGE volumes, we’d have to import coconuts to keep up with the demand. Have you seen the imported coconuts? They’re gross - they've been off the tree for months and are covered in chemicals. Who wants to eat that?
3. The big guys screw the little guys. We’ve heard many stories of small businesses selling to the big Supermarket outlets…. And then get screwed 6 months later. Despite the little guys investing in machinery, production capabilities, and packaging, they get dropped if their product doesn’t sell. Or, even worse, the little guys HAVE to sell their product at a loss because of contractual obligations. No thanks!
So what IS our business strategy?
It’s simple: create delicious & healthy coconut products, use Australian-grown coconuts, and cut out the Middle Man. Keep it small, keep it gourmet, make it available online.
We’ve found HUGE support with people that 1) love our story, 2) love good food and 3) love supporting Australian small business and agriculture. It’s so cool!

To be honest, the strangest thing is that, prior to being asked to be on this panel, I never considered myself in manufacturing. I thought of myself more as an entrepreneur, a mompreneur, a woman in business. But a “Woman in Manufacturing?” Nope.
But it makes sense, and it’s a title I am proud to wear. Why? Because we are food manufacturers. We gather a raw product (coconut) and turn it into something else that consumers can enjoy. We are always creating new products, developing recipes in line with latest food trends, and working with other raw suppliers to create coconut goodness for our customers..
The manufacturing sector in our region is doing very well, too. More and more Australians are prioritizing buying Aussie-grown food and Australian-made goods. And, I am also seeing more food-preneurs coming to the party and launching new Aussie-made food products. It’s great to see!
I love entrepreneurship (I’ve been this way since I was a kid and hired out my cassette tapes to my siblings - true story!), and one of the highlights of the morning was networking with local people to nurture the entrepreneur skills in local school students. My dream is to teach others how to be entrepreneurs and last week I made connections with local high school staff to make that happen. I’m also continuing to develop my teaching skills to empower other mompreneurs to make a living making products they love. Watch this space!

Vanilla was one of our original Coconut Chip flavours, and the Vanilla Coconut Chip is our Delicious Food Award winner. We also use Vanilla Extract in our Coconut Granolas, too. WE LOVE VANILLA!
In fact, we love it SO MUCH, we recently visited the farmers of Broken Nose Vanilla near Innisfail. The farmers, Fiona and Matt, have been inviting us & asking us to visit their farm for many years. Because Covid life is a bit slower these days, we finally had the opportunity to make the trip.
We loved the farm and, surprisingly, SO DID THE KIDS (much to their surprise!). The kids learned how to pick a 'ripe' vanilla bean, how to grade the vanilla beans, and enjoyed homemade cookies whilst overlooking the cane fields.
Also, Jesse was inspired to improve his current vanilla bean production. He's been growing vanilla beans at our home for several years, we have the perfect climate for it!
And I learned how to make Vanilla Extract - and using our homegrown vanilla beans, hello Beach Harvest Vanilla! Coming 2021!
In the meantime, I wanted to offer you guys the chance to use the same vanilla products we do:

Did you know we sell coconut bowls?
I was a little reluctant at first because we don't make them ourselves (and we pride ourselves on using Australian-grown coconuts, nuts, seeds, and fruits!), but many customers were asking for them. The high cost of labour in Australia means that we simply cannot produce them here (and we don't have the huge coconut production like they do overseas), so I had to think of a solution.
So I found an ethical coconut company in Vietnam and ordered a few. They were great!.... so I ordered a box.
As an added bonus, my kids enjoy eating out of the bowls, too! The kids have always enjoyed smoothies, but now they prefer to eat them from the coconut bowls - even new recipes! "It tastes better in the coconut bowl", the kids insist. Go figure.

]]>I love media publicity! It's like an espresso-shot-of-excitement for our business. We've been featured on ABC Landline, SBS, Channel 10. The thrill of a national "shout out" for our coconut products is my favourite "pat on the back" recognition and I am grateful.
So when I got an email from a Brisbane Times reporter last week, I was happy to do the interview.
The angle? How Covid-19 has affected Small Business Artisan Producer Grants winners - like us! (I applied for & won the grant in 2019.)
In summary, despite the Corona-related downturn in business, our April 2020 online sales were up over 300% - due largely to the skills I learned from an e-commerce course I took as part of the grant. Our overall sales are down compared to 2019, but we are thankful for each and every one of our online customers & sales that keeps us going.
And, thank you everyone who supported us (and continues to buy our gourmet coconut products!).
Corona virus has slowed us, but it will not stop us. We have weekly regular customers all over the country, and Aussies - more than ever - want to support Australian-grown food.

Months spent in lockdown appear to have given people an appetite for gourmet Queensland treats, purchasable without leaving home.
Beach Harvest Australian Coconuts, which creates coconut chips, and chocolate artisan KOKOPOD were two of the 50 artisan producers to receive a slice of the state government's $200,000 Small Business Artisan Producer Grants Program.
Beach Harvest Australian Coconuts founder Casey Willetts began the business seven years ago, when she began experimenting with coconuts she collected from beaches around Port Douglas to entice her three young children to eat healthily.
Her hobby went from playgroup treats to a full-time business product, offered in 10 different flavours along with her own granola and muesli.
"In the early days, I would go and find 10 or 20 coconuts on the beach and put coconuts in the pram but now we harvest anywhere between 600 to 1000 coconuts and my husband now climbs the trees," she said.
The mother-of-three said the business depended heavily on local market sales before the pandemic.
Ms Willetts said the grant helped her develop e-commerce skills to boost the business, which gave her the confidence to market during the COVID-19 pandemic.
"The skills that I learnt from the grant helped give me a proper foundation and it's made me feel empowered," she said.
"Our sales went up by 308 per cent this April compared to last April."

I'll be honest - I haven't been highly motivated lately. I certainly wouldn't claim to be "successful" right now, either.
In fact, last week I spent the afternoon at the beach doing nothing!
Did I have work to do? Of course - there's always something to do when you have your own business!
But I wasn't feeling "it", and I haven't been feeling "it" for the past few weeks.
What did I do? I changed my mindset.
Instead of feeling like I had to do "something", I gave myself permission to do "nothing". And when I did "nothing", I liked it! In fact, the women that have admitted this are the ones that have a grip on the current situation and, in fact, are the most successful (in my eyes).
So what did I notice?
I've observed 5 traits amongst women that are not only surviving Covid-19 but are successfully thriving. And it made me thing maybe I'm not doing too bad:
1. Successful women are supporting each other. I am seeing women support each other financially by purchasing from small businesses. We've seen an increase in our online sales, and many of them are from first-time women buyers who intentionally choose to support us. Amazing! In addition, I've seen so much encouragement online: "you got this", "hang in there", "reach out for help". Empowered women empower women. It's happening now more than ever and I love it!
2. Successful women are taking time to STOP. It's ok to do "nothing" after a life of busy hectic chaos! Stop worrying about things you can not control. Stop mindlessly scrolling through social media. Stop judging yourself to others. Stop working and go to the beach. Just. Stop.
3. Successful women are trusting her instincts. I've been sending my 5 kids to school (we are essential workers and also have 2 vulnerable children in our care), but last week my 11 year old son was acting weird and I offered to let him stay home from school because I wanted to spend time with him. By doing so, it came out that he was nervous about going to high school next year. I was so glad he admitted this!
Sure, it's not a huge thing, but I listened to my instincts to spend time with him. As mothers, we are being mindful of the changes in our children's lives, too, and trusting our instincts to do what's best for them.
4. Successful women are prioritizing quality time. Raise your hand if your pre-Covid days were spent rushing around to soccer/dance/piano/tennis lessons? Did you find yourself rushing to make fast/healthy/easy meals? Were you mindful of time, schedules, bedtimes? Yes Yes Yes!!
Sure, life is still busy, but I'm prioritizing quality time with the family and reaching out to friends. I'm making the time to chat with each kid 1-on-1. We are taking more picnics (and supporting other small businesses!) and going on hikes. Finding the work/life balance has always been our Business priority, but now the Life part is more important than ever.
5. Successful women are adapting their business. These past few months have definitely been challenging for small businesses around the world. I quickly realised that we would have to adapt to avoid closing the doors. How? I've been spending more time focusing on providing value for YOU my customer. Our online presence is increased, I am providing new products (our Coconut Lime Cakes have been our #1 local seller!), developing new products (coming soon!), posting behind-the-scenes videos, and experimenting with new sales/deals for our online store.
I am ALWAYS open to ideas for our customers and receptive to what you want, the need you have, and how we can help.
So - what about you?
After reflecting on these 5 pillars of "success", I realise that maybe I'm doing ok after all...

MANY of our customers are, and coconut is a popular food on many diets. Not only is coconut a naturally low-sugar food, but it's also full of beneficial oils, fats, and micronutrients.
And, since many customers ask for ways to incorporate coconut into their diets, I thought I'd share my recipe for our Coconut Keto Muesli. You can modify the ratios as you'd like - but I wanted to show you the step-by-step process that I take when making our most-popular muesli.

1. Beach Harvest Plain Coconut Sprinkles. Our coconuts are harvested off the Port Douglas beaches where they grow naturally. Coconuts thrive in the tropics and are one of the few fruit trees that fruit year-round. If you don't have our Plain Coconut Sprinkles, you can use another brand, but the intensity of the coconut flavour will be weaker.
2. Aussie Macadamias. We use Wondaree Macadamias, a small macadamia farm near Atherton, Queensland. We love supporting fellow small foodie businesses, and this is one of the best.
3. Aussie slivered almonds.
4. Aussie pecans. I like them in big pieces, but some customers prefer them in smaller pieces. What do you think?
5. Aussie linseeds. I'm not a huge fan of these, but they are super healthy and one of nature's super foods.
6. Aussie sunflower seeds. I love snacking on these by the handful, so of course they made it into the ingredients list for the Keto Muesli.
7. 100% certified organic pumpkin seeds. Unfortunately, at present these are 100% organic imported seeds because I could not source Aussie ones. I'm on the lookout, though, and will gladly switch if I can find them. Do you know of any Aussie pumpkin seeds?

I hope this post finds you safe.
As the fires rage around Australia, most of us feel helpless, sad, desperate to do something. My family is lucky - we live in the tropics, where water is in abundance and fires are rare. For that I am thankful.
In the face of tragedy, our human compassion stirs us to do something.
In recent days, millions of dollars of donations are coming in from all over the world to RFS, Red Cross, Animal Hospitals, and others. This is wonderful! - and I understand that donating money is helpful while also helping us feel empowered to fight the problem.
Our family donated to a Kangaroo Island wildlife charity. Like most people, we are saddened by the koala loss and visited Kangaroo Island years ago. We can all donate something, and every bit helps.
But I'm bothered about businesses that "donate X% of profits to charity" or "$1 from every item will go to charity." I, too, thought about doing this from Beach Harvest... but it rubs me the wrong way because I question if the motivations of the businesses are selfless and transparent.
Say a normal sales day is $100. But, if Business X advertises that they are donating some of their sales to charity, and the sales for the day increase to $500 as a result of this, isn't the business the one that profits? And where's the accountability about the charitable donation?
I could be pessimistic - I've previously heard scam stories of people claiming to raise money for "charity", only to find it was a con. And of course, I'm sure most businesses have good intentions - not all are bad.
So, Beach Harvest will not be doing any of these "buy from us and we will donate x" bushfire donation appeals. We are open for business as usual (and of course would love your support, as always), but I'm also taking the time to be thankful for my family, a roof over our heads, and the wet weather of the tropics. There are so many people & animals needing help, and, again, we can all donate something.
We also plan to donate again when the fires have settled - from our business. Maybe koalas like coconut chips? I'd love to send them some, but I have a feeling their human carers may appreciate them more. For now, the koalas need money for medical supplies, and that's something we can give.

]]>A few months ago, we were contacted by the team at Hemingways Brewery Port Douglas about a large corporate event. Hemingway's is awesome because they 1) support local businesses 2) brew delicious beers and 3) have epic sunset views. Before I knew the details, I knew this event was going to be great.
The client wanted "an interactive coconut activity" for the 250+ guests, and they asked us if we could help.
So, we suggested "Coconut Chips Tastings" with 5 coconut chips flavours that go with beer. We served Sweet Chilli, Himalayan Salt, Tasmanian Sea Salt & Caramel, Coconut Vegan Bacon, and Plain Coconut Chips.
It was a hit! The beer flowed, the chips crunched, and the clients loved. I had a blast and, in fact, this is my new fave thing:

]]>This time it's for a delicious coconut caramel slice. Doesn't it look great!
To make the base you need:
Melt the butter together, mix in the almond flour and then bake in a lined baking dish at 180 degrees for 10 min.
Simply melt the ingredients and keep it on a simmer for about 15 minutes, then, once thickened, I like to turn it up to high for 5 min to let it really caramelise - make sure you stir it constantly while round this. Pour over the base then sprinkle with a packet of @beachharvest Himalayan pink salt coconut chips!
]]>Low Carb Donuts?!?!
Recently, the folks @KetoGang developed some Keto-donuts as a competition sponsored by our friends @LowCarbEmporium. How amazing do these donuts look?!?
@KetoGang agreed to share the recipe & photos - enjoy below! They've used our coconut chips on the Banana Donuts, but I'm sure you could use our chips on any of them. If you make any of these donuts, please share them with us and tag us @beachharvest
Here is the recipe:
Makes 12 donuts
Sift dry ingredients and add sugar, then add wet ingredients and mix with a hand mixer.
Using a donut tin, only 1/4 fill the trays as will rise, bake at 180 fan forced for 15-20 minutes or until edges turn golden brown - remove and allow to cool.
Banana coconut donuts
To this mixture add 3-4 drops of banana flavoured liquid stevia, and to the cream - a couple of drops of yellow food colouring, dust the donuts in powdered erythritol and roll the sides in crushed @beachharvest coconut chips.
Chocolate donuts
Melt little zebra chocolate and dip 6 donuts in the chocolate and place in fridge to set, mix cream and cocoa powder, sandwhich the cream between donuts.Cinnamon jam donuts
Mix stevia and cinnamon in a bowl.

You may have noticed our absence lately on Social Media.... we intentionally unplugged and 'went bush' with the kids. We spent several days camping on the Mitchell River - enjoying the amazing tropical winter weather and quality time with the kiddos.
Ironically, my kids love food besides coconut chips, and camping tends to have a lot of junk-food. *sigh*
Before we left, I met Manu Feildel at the Sunday Port Douglas Markets. I heard he was in town for a 'Chefs in Paradise' event, and sure enough I spotted him amongst the market crowds. I used to watch him in the 'Ready Steady Cook' days, but I think he's best known for his role MKR My Kitchen Rules. He graciously agreed to a pic with me and one of my staff Matthew - thanks Manu!

I love seeing what clever food bloggers can do with our coconut chips, and this recipe by @DeliciouslyKeto is amazing! Kim uses Beach Harvest Plain Coconut Chips as the final touch on this low carb Keto dessert.
Here is the recipe:
Vanilla Bean and Berry Coconut Tartlet (Serves 4)
Crust:
1 1/2 cups almond flour
1/4 cup Nutra Organics coconut flour
1 tbsp Erythritol
2 tbsp psyllium powder
2 tbsp ghee
2 eggs, lightly whisked
Vanilla bean filling:
3/4 cup cream
3/4 cup almond milk
2 tbsp Erythritol
1/2 vanilla bean
1 1/4 tsp gelatine
1 tbsp water
Berry compote:
1 tbsp Hawthorne Hill Farm Mixed Berry Jam
1 cup mixed fresh berries (strawberries, raspberries, blueberries and blackberries)
Toppings:
30g Zebra dark chocolate chocolate

I just wanted to share some exciting coconut news for us - we have a Coconut Cart!
We've been providing fresh coconut cocktails & drinks for several years - mainly for weddings & corporate events in Port Douglas - and we've taken it a step further by making a cart for the 'nuts to sit on. But - it's not only for coconuts - this cart would be an awesome champagne bar, dessert station, or, well, good for just about anything.
It's fully white to provide a clean, crisp canvas for any themed styling, and has a stainless bench and stainless pole features to 'posh' it up and look extra glam.
We've also designed it to allow lights - think fairy lights, Edison bulbs - but haven't yet styled that photo!
Yes, that's Jesse, my coconut tree-climbing husband, who hates posing for pictures but he's very proud of his hand-made cart. He's a carpenter by trade & has been a builder for 10 years, so of course this cart is a bit OTT. But it's made of steel and is strong as heck.
]]>I started my coconut journey in 2013. I read about the benefits of coconut and thought, "wow, we need more of this!"
Unfortunately, I didn't grow up with coconut, so I had no idea how to feed coconut to my family.
Luckily, I've found some amazing coconut recipes that my family continues to enjoy. I'm so happy to share them with you!
Do you want to eat more coconut? At a loss of where to start? These are 3 of my favourite ways to enjoy coconut (hint: they're kid friendly, too!).
Breakfast - coconut granola
I've always enjoyed cereal for breakfast, so switching from the mass-produced, highly processed stuff in the grocery stores to a nutrient-dense, coconut version was easy. I enjoy coconut granola with fresh banana and almond milk, but the beautiful thing about granola is you can modify it to suit your tastes.
It's also very easy to make your own - our granola includes coconut, macadamias, almonds, and pecans, but you can make your own and omit the cheap additives commonly found in the mass-produced brands.
Lunch - chia pudding
This is filling and will get you through the afternoon! I LOVE coconut chia pudding - and it's SO EASY and delicious. This easy recipe takes 2 minutes to make and keeps well in the fridge to save for later:
Dinner - pumpkin soup
This is one of my family staples and my kids LOVE IT. It's healthy, easy to make, tastes delicious, and is perfect served with fresh warm bread.

]]>Recent rain & monsoon conditions in Far North Queensland are wreaking havoc on local small businesses, including ours.
Coconut Harvesting - Jesse, who hand harvests all the coconuts from Port Douglas beaches, had many delays due to rain and winds. He eventually ventured out, harvested in heavy rains, and came home with 1000+ coconuts.
But - there were many coconuts to pick up on Port Douglas' 9 Mile Beach - see photo. If only we had access to these isolated, hard-to-reach spots on the beach...
Markets - Our Port Douglas & Cairns markets have been extremely quiet. As a result, our sales are down and our staff hours are reduced. We are working on ideas to reward our customers with special February sales. Stay tuned!

Coconut & Lime Loaf with Lime Icing
My good friend Cristine from CWA gave me a recipe as a means to showcase our Coconut Sprinkles and to give our customers inspiration on ways to use them in their baking. I made it Dairy Free (you could also make it vegan by substituting eggs for chia seeds), and this Coconut & Lime Loaf still has that homemade-with-love authentic taste, and the blend of coconut and lime is delicious perfection!
Cristine bakes these in mini-loaf tins, making them perfect to slice and share.
Loaf Ingredients:
1 1/2 cup SR flour
1 cup sugar
1/4 cup coconut oil
1/4 cup vegetable oil
2 eggs
1 cup almond milk
1/2 cup Plain Coconut Sprinkles
1 Tablespoon Lime Rind
Lime Icing Ingredients:
1-2 cups of plain coconut yogurt
Juice of 1 lime
Method:
Beat the flour, sugar, oil, eggs and milk until sugar is dissolved. Add Coconut Chips and Lime Rind. Bake in moderate oven for approx 40 min.
Lime Icing:
Mix all icing ingredients together and spread on loaf when it’s cooled. Top with additional Coconut Sprinkles for decoration.

I hope 2018 is finding you well so far...
We spent the holidays with my family in Florida and Cuba - we had a blast! There were coconut trees everywhere in Cuba and we thought, "hmmm, Beach Harvest in Cuba?" Unfortunately, their government isn't known for being friendly to outside capitalist ideas....
Anyway, it's back to Australia and back to normal - yay! The kids started school this week (my youngest, too, just started Prep!), and we are excited for the year ahead.
And it's nearly Australia Day! Do you have any plans for the long weekend? I love Australia Day because I've called Australia home for nearly 13 years, 5 of which I've been a citizen. I'm blessed to have my heart in two places.
